Day 10 — A favorite food & recipe

I LOVE THIS RECIPE - It is easy, and SO Yummy!


Brown Sugar Spiced Pork Tenderloin*Makes about 2 1/2 pounds of pork tenderloin, enough to serve 8 adults*

Rub Ingredients:

2 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon cinnamon
2 pork tenderloins (2 1/2 lb. total), each tenderloin cut into two chunks
2 tablespoons olive oil

Glaze ingredients:

1 cup packed dark brown sugar
2 tablespoons finely chopped garlic (about 6-8 cloves)
1 tablespoon tabasco sauce

Preheat oven to 350 degrees. In a small bowl, stir together salt, pepper, cumin, chili powder, and cinnamon, then coat the pork with the spice rub. Heat the oil in an ovenproof 12-inch heavy skillet that is ovenproof  over medium high heat until the oil is hot and rippling. Brown the pork, turning, about 4 minutes total. Leave pork in the skillet. If you don’t have an ovenproof skillet, brown the pork in a skillet and transfer it to a foil-lined baking pan (like a 9X13-inch).

Stir together the brown sugar, garlic, and Tabasco and pat on top of each tenderloin. Roast in the middle of the oven until a thermometer inserted diagonally in center of each tenderloin registers 140, about 25 minutes. Let pork stand in the skillet at room temperature for 10 minutes. The temperature will rise to about 155 while standing. Slice on the diagonal and serve, spooning the sauce from the skillet on top of the pork.

Day 08 — A favorite song

Again, sorry for the delay, but it has taken me some time to find a song I LOVE. I realized this was the one I wanted to post as I turned up for Henry and I to dance to. Its fun to listen to, and has a great message!

Andes Mint Truffles...


These baking chips were .87 at Target this week. I am definitely going to have to try this recipe. 
Andes Mint Truffles:

Andes Baking Chips Recipes Flourless Mint Chocolate CakeIngredients:

3 tablespoons sweet butter cut into pieces and softened
1 tablespoon milk
2 egg yolks at room temperature
1 cup cocoa powder
1 cup Andes® Crème de Menthe Baking Chips
1 tablespoon Brandy or Rum (optional)

Directions:

Place Andes chips in heavy gauge saucepan. Cover pan and place in a frypan containing about 1 inch of hot, not boiling water set over low heat. Water around saucepan should come up to the ingredients inside the saucepan.
Set timer for 10-15 minutes depending on the amount of ingredients in the saucepan. Allow Andes to melt undisturbed making sure the water bath does not bubble or boil.
When timer goes off, remove cover and stir with wire whisk until smooth. Cool 5 minutes.
Beat egg yolk lightly, add a spoonful of candy mixture to the yolks and stir. Add the yolks to the candy in the pan and whisk. Mixture may become grainy; don't be alarmed. Add milk and brandy and whisk until smooth.
With whisk or hand-held electric mixer, beat in the butter piece by piece until smooth. Cover with plastic wrap pressed gently against the truffles mixture and refrigerate at least 4 hours or overnight.
To form truffles, scoop out by teaspoons, shape into irregular balls, roll in cocoa powder and shake off excess cocoa.
Place on plate or jellyroll pan, cover with plastic wrap and store in refrigerator. Remove from refrigerator 30 minutes before serving. If desired, place each truffle in paper candy cup.

Yield:

24 Truffles

Day 07 — Something I want to buy

Now this is one I can do.... Here's my little list....

I love these.... I know. I have a hobby of finding really great deals! Actually, it's more like I seem to run into them fairly often... So here's one of my great finds.
