Sweet Husband

I wanted to share a sweet thing that Josh did for me this weekend. I picked Josh up from the metro after studying at school on saturday, and he informed me he wanted to go to the mall. Hm......I asked why, and wondered what he was looking for or needed, thats usually the purpose of his desire to go to the mall. He just said he wanted to go wander around. Once we got to the mall he took Henry from my arms, handed me 10.00 and said to go shopping. To find myself something I wanted and buy it. He was taking Henry to wander L.L. Bean and I had thirty minutes. What a sweet husband! I ended up returning to L.L. Bean with nothing to show for my thrity minute shopping spree as it is difficult for me to spend money, especially on myself. Thats when Josh took the liberty to help me find something. :) I ended up with 2 cute pair of flats for only 10.00! I love Josh so much! It was sweet of him to take me shopping. I just want him to know how much I love him. He is truly a great husband and I am so lucky to have him.

Asian Salad

So, I was invited over to Emily's house this week (She is in my ward) to play while we mostly watched her little Jonah play. She made this salad that I just thought was amazing, which was amazing, because I'm not much of a salad eater. I'd thought I'd share her recipe. Hope she doesnt mind!

This recipe is a "add however much you want of what you like the most!" kind of recipe, so I'm just going to tell you how much I added for mine.

Lettuce (Just iceberg is great)
Shredded napa cabbage
Chicken - 2 tenderloins grilled or boiled, and then cubed, I like it cut really really little
Toasted almond slivers
(@ 325 for 15 minutes to toast)
Green onions - I used 3 stems

Dressing:
4T sugar
1/2 tsp pepper
1 tsp salt
4 T rice vinegar

Bring to a boil, cool, and add 1/2 cup of vegetable oil - whisk together. VERY YUMMY!!!

Thanks Emily!

Rough Day...

Good evening, It's so LATE! I cant believe I'm up still. I am amazed that I have a few friends who stay up this late with their brand new babies. I just have a minute or two left in me before I crash, But, shout out to a friend....I promised I'd get this recipe up :)
Im not even sure what I call this dish so I've named it:

Eve's Birthday Lunch with the Girls

1 1/2 - 2 cups boiled (or grilled) chicken breast and pulled so that it's shredded
4 oz Cream Cheese
2 oz Butter
Diced Celery - Depends on how much crunch you like :)
1/2 Tsp Pepper

Biscuits
Chicken Gravy

Soften cream cheese and butter
Combine chicken, cream cheese, butter, celery, and pepper.
Roll out biscuits and put a spoonful of mixture in the middle of the biscuits. Make sure you close the dough really tight. Bake at 350 for 15 minutes, or until golden brown on top.
Top with Gravy

I like to serve with a salad, stuffing, or mashed potatoes. :) N'joy!

Ps - This recipe really is about making to your taste. If you like cream cheese, add a little more.... :)

2 Funny stories to remember:
Henry pee'd all over dad tonight at Target - I'm so proud of him :) Just teasing

After unlocking my side of the car tonight Josh climbed in on his side and started the car with his own key, so I didnt notice that after buckling Henry in, that my keys were still in the keyhole on the outside of my side of the car....needless to say that I didnt notice them until were on the road and heard this funny clanking on the side of the car!! OOPS!

SLEEP!

I have an amazing story. To any mom with a 2 month old baby, you will find it amazing that little Henry slept for 8 hours last night! from 10:30pm to 6:30am! And not only that, but he went almost 10 hours between eating. He ate at 9pm last night. I am feeling very energized this morning, and even made german pancakes for breakfast :) Henry is out on a walk with his daddy right now, so I even get to go jump in the shower, and get ready for the day. I know it's a fluke, and will probably never happen again, but I am pretty excited it happened last night. YAY!
I have also begun to notice that every day, right at 1pm, Henry falls asleep. It doesnt matter where we are, He has designated that his nap time. My sweet little boy. I am a very lucky mommy.

Over-reaction...

Good Morning -
I have just a minute...as usual, to write down a couple funny stories before I forget them. Last week, Friday maybe, I walked into my bathroom to find a ridiculously large at the time what I thought was a spider on my shower curtain. So, being as brave as I am got a shoe, and tried to get it. However it was to my surprise that this thing JUMPS! And he somehow knows right when I'm coming. He's a fast little bugger. So now he is on my floor near the toilet, and I try one more time with my shoe and he jumps a couple more times. Thats when I realize I needed a different strategy. I know it sounds crazy now, but I grabbed my can of aerosol hairspray and shoot. However that didn't last long because is just jumps around a little more. At this point I had to go the bathroom so bad, but dont because I am worried about the spider/cricket coming near me. So, I leave him in there, hoping i'll come back to him already dead because of the hairspray right. Wrong. Now he is just gone, and I still need to go to the bathroom! But of course I dont until later that day when Josh is home and can go inspect the bathroom for me! It wasnt until 2am the next morning that I find my new little enemy in Henry's bedroom on the floor just under his crib!! I weighed my options and decided the only thing to be done was wake up Josh. He wasnt very happy with me but after just a few jumps Josh was able to get the little guy. YAY! (I am hoping it was the same cricket that was in the bathroom...EW! crickets!? EW!)

My other funny story that I wanted to write down really fast was that just the other night when I was getting back into bed after a 2am feeding with Henry, I was adjusting the twisted up blanket when Josh (in his sleep) grabbed a big chunk of it. So I climbed in bed and tugged on the blanket just a little when he tugged back, and rolled right of the bed! At first I was startled! There was a big heap of husband and blanket on the floor. It takes just a second before Josh climbs back into bed, and thats when I start laughing almost to the point of peeing my pants. Who rolls out of bed?! My dear sweet husband, thats who.

Until our next fun adventure......

Fun things we've done

Hi out there -

Its finally the weekend! I always feel like I have just a few minutes to write, before my sweet little Henry wakes up and needs my attention. We found a farmers market today that one of the girls in my ward works at. That was so much fun. It felt like home. I love going to farmers markets. I never buy anything but its always really fun atmosphere. The one in Salt Lake is bigger, and has much much more then food. The one we were able to make it to this morning just had produce, and a lot of really beautiful flowers.

Last night (9/25/09- Happy Birthday Kate : ) ) we went to a Nats Baseball Game. The Nationals played the Braves. That was a lot of fun. The stadium is huge! Henry and I have never been to a major league baseball game. Henry got a little nervous we think with all the noise, but it made for a funny picture. We rode the metro into the city which we don't do very often. We were able to meet some other couples from the J. Reuben Clark Society. The Nationals lost, but we had a really fun night.
We also made it out the zoo earlier this week. We saw the pandas, and zebras, and some other fun animals, but decided that we were going to have to make it out there a couple more times to see it all. We went with some of the girls in our ward and with their little babies. It has been a lot of fun getting to know the girls in my ward. I am lucky to be in the same boat with other people. I think without them, this move across the county with a very tiny baby would be much harder.
Well...Until our next adventure.....

Happy New Year!
So the last time I wrote was November 29th. I had to read it just to see what was going on in my life. Let me update you. Josh's dad's surgery was very successful. He is home and doing well. I did register for classes! Yay! However, Josh and I have some exciting family news! The day I registered for classes I found out that I am pregnant! Crazy huh. So, sadly, I wont be returning to school, due to the fact that I need to continue to work for insurance purposes and I havent been feeling too well, so the combination of work, school, and being pregnant is a little overwhelming. I will continue to work, and hope someday I will be able to finish school. Josh is graduated! I am so so so so proud of him. He since has heard so far from Penn State, and The University of Denver Sturm, and has been accepted to both. Yay! I think we are going to have a very exciting summer. I am due August 5, 2009, and am about 9 weeks now. My first doctor's appointment was yesterday and for the first time we got to listen to the baby's heartbeat. I cant tell you how amazing that was. It is so incredible to feel. Wish me luck! I hope the nausea, and headaches and all this fun stuff passes soon! I'll keep you posted....or at least I'll try!
